This simple Persian salad will compliment any meal. Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. Chop and put in a serving bowl:
    • 4 Persian cucumbers
    • 3 medium tomatoes
    • 1/4 cup red onion
    • 3 TBS parsley, American
  2. Whisk in a small bowl:
    • 3 TBS extra virgin olive oil
    • 2 TBS lemon juice
    • 1/8 tsp salt
    • 1/8 tsp black pepper, ground
