Add a little sparkle to your next celebration with this pink mimosa! With only three simple ingredients and a swirl of edible glitter, this bubbly drink is as fun to look at as it is to sip. It’s perfect for brunch, bridal showers, and Valentine’s Day parties.

I confess that I am a total lightweight when it comes to drinks and cocktails. Although I am not a big drinker, I do like my bubbles and enjoy champagne. My favorite summer drink is my sparkling peach sangria.
So when a friend of mine asked for an easy valentine cocktail, I came up with this pink mimosa. It’s quick to whip up and festive for any party!

Ingredients needed

- Sparkling white wine: You can use your favorite sparkling white wine, prosecco or champagne.
- Pink Lemonade: I chose to use pink lemonade for my “pink juice” in this mimosa. You can also use any pink juice like strawberry, raspberry, guava or even pink hued fruit punch.
- Edible Glitter: What makes this mimosa shimmer is the addition of edible glitter, also known as edible luster dust. You can use any pink hue, but remember it will alter or enhance the color of your drink.
Step by step directions

- Add liquids. Pour in juice and champagne to your glass.
- Stir and serve. You can see what the different kind of pinks add to the color of the final cocktail. Add your glitter, mix well and serve. Garnish with strawberry slices.

You can use a little or a lot of edible glitter to your cocktail. I used rose red for the deep color it gave to my drink. As my daughter calls it, it’s Barbie pink! It goes perfectly with my Barbie cake!
Drink glitter isn’t just for cocktails. You can add it to kid-friendly juices and mocktails for a touch of glam and fun.
For the garnish, I cut a strawberry in half and used a small heart cutter to cut out a heart. You can also use a pairing knife to hand carve a heart. You can add the strawberry heart to the rim of the glass or pierce it with a toothpick.
I hope you give drinkable glitter a shot, no pun intended, and add it to your bar cart. It would be a fun addition for a DIY champagne bar.

Since I use strawberry lemonade in this mimosa, it gives your cocktail and nice sweet and sour flavor. Some cocktails are too sugary, but this one is definitely not.
Edible glitter or luster dust only changes the color and adds shimmer to your drinks. It has not flavor.

Shimmering Pink Mimosas
Ingredients
- 750 ml sparkling white wine, prosecco or champagne
- 750 ml pink lemonade
- 1.5 teaspoon edible glitter
- 6 fresh strawberries optional garnish
Instructions
- Fill glass halfway with juice then top off with champagne.
- Add desired amount of edible glitter then stir to combine and serve. A little goes a long way, so I suggest approximately ⅛ tsp.
