Chicken Drumsticks with Chipotle Glaze

Smokey chipotle chiles in adobo sauce give these legs a kick! Recipe adapted from Cooking Light, June 2010



  1. Preheat oven to 400ºF.
  2. Wash and pat dry:
    • 1 1/2 lb chicken drumsticks
  3. In a large bowl whisk together:
    • 1/4 cup lime juice
    • 3 TBS soy sauce , low-sodium
    • 2 TBS honey
    • 2 TBS chipotle chile in adobo sauce
  4. Add chicken to sauce and toss to coat.
  5. Let chicken marinate for 10 minutes at room temperature.
  6. Arrange the chicken on a roasting pan coated with cooking spray, reserving marinade.
  7. Bake for 15 minutes.
  8. Place reserved marinade in a blender, and process until smooth.
  9. Place puréed marinade in a small saucepan.
  10. Bring to a boil, and cook 3 minutes.
  11. Brush chicken with half of cooked sauce.
  12. Return chicken to oven and bake an additional 10 minutes.
  13. Brush chicken with remaining sauce.
  14. Bake an additional 10 minutes or until a meat thermometer inserted into the thickest part of the drumstick registers 165°F.
  15. Transfer to a platter and serve.
