Grilled Tequila-Lime Grilled Chicken Tacos

This fabulous tequila & lime marinade will makes the chicken extra juicy, tender and full of south-of-the-border flavor. Recipe by Laura Bashar of Family Spice



  1. Rinse and pat dry with paper towels:
    • 6 chicken breast, boneless skinless
  2. In a blender purée until smooth:
    • 1/4 cup extra virgin olive oil
    • 3/4 cup lime juice
    • 1 jalapeño pepper , seeded & chopped
    • 1/2 cup tequila
    • 3 TBS Triple Sec
    • 1/4 cup cilantro, fresh
    • 1 oz small onion , quartered
    • 2 garlic cloves
  3. Place chicken in a non-reactive container and pour marinade over it, coating it thoroughly.
  4. Cover and refrigerate for 4-6 hours, turning the chicken several times.
  5. Remove chicken from the refrigerator 30 minutes prior to cooking.
  6. Heat grill with all burners on high for 10 minutes, with lid closed.
  7. Oil grill and add chicken breasts.
  8. Grill until browned all over, about 5-10 minutes per side
  9. Continue grilling chicken covered until meat thermometer internal temperature reads 180º, about 10 minutes.
  10. Transfer chicken to cutting board, tent with foil, and let rest 10 minutes.
  11. Cut chicken into strips or smaller chunks.
  12. Serve over salad or with flour/corn tortillas.

Cooking Tips: You can also use this marinade for bone-in chicken thighs, legs and breasts. Cooking time will take longer, approximately 30 minutes.
