Step up your summer sandwich with the Avocado BLT: creamy avocados, sweet summer tomatoes, salty bacon and peppery arugula.

Some people insist that everything tastes better with bacon. I must admit, bacon does add a nice dimension to many great meals. But I like to say that everything tastes better with avocados. It might be because I live in California and avocados are easy to find here.
But, in all honesty, there’s not much that I haven’t enjoyed eating after I topped it with some fresh avocados. I’m talking eggs, chili and now this avocado BLT sandwich.
What is the BLT?
The infamous BLT sandwich became popular in the US after World War II. The growing number of large supermarkets meant that more ingredients were available all year round, no matter what season we were in. For some, this isn’t always a good thing.
The BLT stands for bacon, lettuce and tomato. This super popular sandwich is typically served on toasted bread with mayonnaise. Don’t let it’s simplicity fool you. I remember the first time I had a BLT sandwich and couldn’t believe how something so easy could taste so good.
A bit of advice: choose ripe tomatoes when in season. Because they taste the best. Winter tomatoes, eh, not much flavor. But summer tomatoes? They are sweet and delicious and will make your avocado BLT shine!
Best lettuce for a BLT
The first choice in lettuce in the traditional BLT is the classic iceberg lettuce. What’s not to love about iceberg lettuce? It’s cheap, crunchy and gives a cool note to your sandwiches. But, you know me. I like to mix things up a bit.
For my avocado BLT, I chose a peppery arugula. Although I do love crunchy iceberg lettuce, I don’t like that it has pretty much zero nutritional value. And I’m all about sneaking in nutrition as well as flavor.
So try something different in the lettuce department. If you want to keep the crunch there is romaine lettuce and even bib lettuce. For peppery there’s endive, arugula and sprouts. For neutral flavor with lots of vitamins, why not spinach?

Final thoughts on the avocado BLT
So what do you think? Are you ready to try something new? If you’re an avocado fan, I’m sure it’s a no-brainer to add avocado to a BLT sandwich. If you like foods with more kick, you can also mix in some hot sauce in the mayo and spread that on your sandwich. Can you feel the heat, baby?

The Avocado BLT
Ingredients
- ยฝ lb bacon
- 2 kaiser rolls
- 1 TBS mayonnaise
- 2 oz arugula
- 1 heirloom tomatoes sliced
- 1 avocado sliced
- 1 teaspoon lemon juice
Instructions
- Heat a large skillet over medium high heat and add bacon.
- Cook until both sides of bacon are cooked and crispy, approximately 5 minutes. Transfer to a plate lined with paper towels to cool and remove the excess grease.
- Cut open and toast kaiser rolls.
- Spread mayonnaise inside the buns.
- Start layering into the bread arugula, tomatoes and bacon.
- Top with avocado slices.
- Drizzle lemon juice over the avocado.
- Place the top half on your sandwich and serve.
