Pumpkin Macaroni & Cheese

Celebrate Autumn with pumpkin hidden inside a family favorite: Creamy Macaroni and Cheese! Recipe by Laura Bashar of Family Spice



  1. Preheat oven to 375ºF.
  2. Butter or apply non-stick spray to a 9" baking dish.
  3. Bring a large pot of salted water to boil over high heat.
  4. When water is boiling, add:
    • 1/2 lb macaroni
  5. Cook according to the macaroni package directions, until pasta is firm and slightly undercooked, approximately 8 minutes.
  6. Drain macaroni in a colander and reserve.
  7. In the meantime, heat a small saucepan over medium heat and melt:
    • 2 TBS butter, unsalted
  8. When butter is foamy, whisk in:
    • 2 TBS all-purpose flour
  9. Cook flour for two minutes.
  10. Slowly whisk in:
    • 2 cup milk
  11. Whisk until there are no lumps.
  12. Whisk in:
    • 1/2 cup pumpkin purée
  13. Cook until sauce thickens, approximately 2 minutes.
  14. Remove from heat and whisk in:
    • 1/4 tsp salt
    • 1/8 tsp black pepper, ground
    • 1/4 tsp nutmeg, ground
    • 3 cup cheddar cheese , shredded
  15. When cheese has melted completely into the sauce, mix sauce with the reserved macaroni.
  16. Pour macaroni and cheese into prepared pan.
  17. Bake uncovered for 25-30 minutes, or until golden and bubbling.

Serving Suggestions: Use different shapes of pasta made of whole wheat, spinach and other healthy ingredients. You can also add pumpkin purée to boxed macaroni and cheese.
