Chocolate Nutella Cookies
Nutella? In a cookie?!! Yeah, you know these are irresistible! Recipe adapted from Simply Recipes
Ingredients:
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup brown sugar, light, packed
- 1 1/2 cup butter, unsalted, room temperature
- 1/4 cup cocoa powder, unsweetened
- 2 eggs, large
- 2 cup all-purpose flour
- 2 TBS all-purpose flour
- 1/2 cup hazlenuts, chopped
- 3/4 cup granulated sugar
- 1/2 tsp vanilla extract
- 1 cup Nutella
- 1 cup chocolate chips, semi-sweet
Instructions:
- Preheat oven to 350ºF.
- Using a stand mixer, whisk until light and fluffy:
- 1 1/2 cup butter, unsalted , room temperature
- 3/4 cup brown sugar, light , packed
- 3/4 cup granulated sugar
- Mix in:
- 1 cup Nutella
- Scrape down sides to ensure even mixing.
- Mix in, one at a time:
- 2 eggs, large
- Mix in:
- 1/2 tsp vanilla extract
- In a separate bowl whisk together:
- 2 cup all-purpose flour
- 2 TBS all-purpose flour
- 1/4 cup cocoa powder, unsweetened
- 1/2 tsp baking soda
- 1/2 tsp salt
- In batches, mix dry ingredients into wet until fully incorporated.
- By hand, fold in:
- 1/2 cup hazlenuts , chopped
- 1 cup chocolate chips, semi-sweet
- Drop cookies by rounded tablespoonfuls onto ungreased baking sheet or line a baking sheet with parchment paper for easy removal.
- Bake for 10-12 mins, or until golden brown.
- Let cookies rest in the baking sheet for one minute, then using a spatula place onto a cooling rack to cool completely.
