I have recently stumbled upon a great blog, Elana’s Pantry. She has a wonderful collection of gluten-free recipes. Although my family and I do not have any dietary restrictions, I am always looking for great-tasting, healthy recipes. Plus, who isn’t watching their weight? I have a sweet tooth and I need to find a better outlet for it (and for my waistline!). That’s when I saw her recipe for gluten-free brownies. Have my prayers been answered??

Elana uses almond flour for many of her recipes. She has developed amazing tricks to produce some very delicious treats. I have always been a fan of stevia and agave nectar, two natural sweeteners that have low-glycemic levels. But, I admit, that I have never really baked with these fabulous ingredients.

The gluten-free brownies call for almond butter, unsweetened cocoa powder, agave nectar and yummy dark chocolate chips. In the past I have tried almond butter… plain… off a spoon (like I’ve done with my natural peanut butter)… I nearly gagged. I literally couldn’t swallow it. I nervously followed Elana’s recipe, very skeptical about the outcome. But my love for all things coated in chocolate, kept me going.

WOW! Was I wrong! Now, you are not getting the same rich brownies you would normally get with butter and flour and sugar, but I must admit: my sweet tooth was soooo happy. And my conscience was happy, too. You can’t tell by some of the creations I bake, but I do not care for so much sugar in my desserts. I really enjoyed these brownies with my afternoon tea, and you will, too! Now off to discover more of Elana’s treats…

Gluten Free Chocolate Chip Brownies

Another fantastic treat where you miss the flour and sugar. The almond butter used is nutritious and very filling. You can enjoy this brownie and feel good! Recipe adapted from Elana's Pantry

Ingredients:

  • 16 oz almond butter, salted
  • 2 eggs, large
  • 1 1/4 cup agave nectar
  • 1 TBS vanilla extract
  • 1/2 cup cocoa powder, unsweetened
  • 1/2 tsp kosher salt
  • 1 tsp baking soda
  • 1 cup chocolate chips, dark

Directions:

  1. Preheat oven to 325ºF.
  2. In a large bowl blend with a hand blender until smooth:
    • 16 oz almond butter , salted
  3. Stir in and combine:
    • 2 eggs, large
    • 1 1/4 cup agave nectar
    • 1 TBS vanilla extract
  4. Blend in:
    • 1/2 cup cocoa powder, unsweetened
    • 1/2 tsp kosher salt
    • 1 tsp baking soda
  5. Fold in:
    • 1 cup chocolate chips, dark
  6. Grease a 9" x 13" baking pan and pour batter into dish.
  7. Bake for 35-40 minutes.
  8. Allow brownies to cool in the pan before serving, approximately 45 minutes.

Notes:

Serving Suggestions: Dark chocolate is rich in antioxidants and low in sugar. If you can't find dark chocolate chips, use a dark chocolate bar and cut it into chunks.

Cooking Tips: Almond butter and agave nectar can be found in natural food stores and can also be purchased online.
