This whipped brie recipe is not only one of the easiest appetizers to whip up, but also incredibly creamy, rich and absolutely irresistible. It is topped with raspberry compote, rosemary and baked brie chips making it a dreamy and elegant appetizer.

Appetizers are my favorite. I love grazing on a lot of different foods instead of sitting down and eating one big meal. And dips – yes! Dips and chips. My total weakness.
I am always on the lookout for quick and delicious appetizers. I recently hosted a little lady’s night at my house and one of my friends brought over whipped brie.
Now I love brie hot or cold. A baked brie wrapped in puff pastry is a standard at my house during the holidays. Absolutely irresistible. And a toasted brie sandwich is total gourmet comfort food.
But this was the first time I had ever tried brie whipped and WOWZA! My mind and taste buds were blown away. My friends and I just couldn’t stop eating it.

Recipe highlights
- Simple: Whipped brie is basically brie cheese, minus the rind, whipped like crazy in the food processor. You spread it in a bowl, like hummus, and garnish it with jam or honey. Boom! It’s ready!
- Texture: The creamy, silky smooth brie is perfect for dipping. It is also topped with baked rind bits adding delicious crunch!
- Flavor: Creamy brie topped with addictive brie crisps is so crazy good! My homemade raspberry compote adds a sweet and sour component, but you can use jam you already have or honey instead.
Ingredients you need
- Brie: You will need at least two wheels of brie, a total of 1-pound of brie. If you have a mini food processor, you can use one wheel of brie. You can use regular or double cream brie. I used regular brie and it whipped up just fine.
- Raspberry compote: I topped my whipped brie with homemade raspberry compote. You can use store bought compote, jam or honey, depending on your preference and how sweet you want it.
- Fresh Rosemary: I added some fresh rosemary for flavor and garnish. You can also use fresh basil, thyme or mint.
- Fresh raspberries: Since I was using raspberry compote, I added some fresh raspberries as a garnish. This is optional.

- Trim the brie. Using a serrated knife, carefully trim off the wax from the wheels of brie. Don’t discard them. It is easier to remove the rind when the brie is cold.
- Bake the rinds. Place the slices of wax on a baking sheet lined with parchment paper or silicone baking mat. Bake at 400ºF for 10-12 minutes, until golden. If you want, top with cracked pepper. Let it cool.
- Cut the cubes. While the wax cheese bits are baking, cut the remaining brie wheel into cubes and place them in the bowl of your food processor.
- Whip the brie. Process the brie for about 5-10 minutes. As it whirls around, you will hear how the brie goes from being simply mixed then turn into a massive cheese ball and eventually into a pillowy soft whip. The blade of the food processor will warm and soften the brie while it whips air into it.
You know it is done when you spoon a little out and it is soft like frosting.
- Spread into bowl. Spread the whipped brie in a shallow bowl. You can also spread it over a cutting board.
- Add toppings. Spoon some of the raspberry compote over the brie. Garnish with raspberries and chopped rosemary. Sprinkle some toasted brie bits over it all. Serve with pita chips and the remaining brie toasties.

Feel free to garnish your whipped brie with any of your favorite flavors:
- Honey: Keep it simple with a drizzle of honey over the top
- Jam: I have several wonderful homemade jam recipes that would pair beautifully with the whipped brie, like blueberry preserves, strawberry preserves with balsamic vinegar or my fig jam. Go savory with some delicious bacon jam with chipotle peppers!
- Fresh fruit: Toss some fresh berries with balsamic vinegar or let them macerate with a little sugar and place them on top. You can also just use chopped season fruit like peaches during the summer or pomegranate during the fall.
- Flavored olive oil: You can go savory with some chili oil garnish with citrus infused olive oil.
- Nuts: Toast some chopped nuts like cashews or pistachios in the pan with some butter, brown sugar and salt and garnish with them.
- Leftover cranberry sauce: This is a great way to use up any leftover cranberry sauce you have from the holidays.
Storing Instructions
TO STORE: Cover your brie with plastic wrap and store in the refrigerator for up to 3 days. It will be hard and needs to be brought to room temperature prior to serving.
Whipped brie has the best texture right after you whip it up. You can refrigerate the brie, minus the toppings for 1-3 days prior to serving. Be sure to let the brie sit on the countertop at room temperature for about 30 minutes first. Use a rubber spatula with stir and whip the brie up again, then garnish and serve.

So what are you supposed to do with the wax?
