I shared this project over 10 years ago when my youngest baby was 10-years old. She was in 5th grade and it was her last year of elementary school. Which meant it was our last year of elementary school.
When all three kids were little, I happily took on the role of room mom so I could share their milestones with them. It was work, I won’t lie, but it was also fun.
During this time, I met kids who had food allergies and I did my best to make sure they didn’t miss out on anything. From Christmas Oreos, s’more pops and these marshmallow pops, I really enjoyed creating treats that anyone could enjoy.

Ingredients needed

- Chocolate: You use any kind of chocolate from semi-sweet to dark chocolate to melt and coat your marshmallows. I’ve used dairy free chocolate for my nephew who has a milk allergy. You can also use candy melts (even dairy free candy melts) in any color and flavor.
- Marshmallows: You will need large marshmallows for this treat. You can even use extra large marshmallows or homemade marshmallows.
- Sprinkles: I used rainbow jimmies to match the rainbow valentine printable. You can use any sprinkles or chopped candies.
- Supplies needed: I use colorful paper straws to hold my marshmallows, but you can also use lollipop or popsicle sticks.
Step by step directions

- Melt the chocolate. Melt the chocolate chips in the microwave in 30-second increments, stirring the chocolate between increments.
- Dip the marshmallow. Insert a paper straw into each marshmallow then dip it halfway into the melted chocolate, rotating it to keep it smooth.
- Add sprinkles. Dip into the sprinkles to cover the bottom, then roll the sides.
- Let the chocolate set. Place the marshmallow onto a baking sheet lined with parchment paper.When finished, allow all marshmallows to chill to set.

Like most other girls, my sweet girl loved rainbows, and so we came up with these super cute Rainbow Valentine marshmallow pops and cards.
You can get the rainbow free Valentine printable here. Print on card stock or photo paper then cut into cards. You will need an X-acto blade to cut the slits for the straws to slide through.

Attach these cards to rainbow sprinkled marshmallow pops or with:
- Crayons
- Skittles
- Rainbow fruit roll-ups
- Rainbow colored bracelets
- … and just about anything super colorful!

Storing Instructions
TO STORE: Wrap them individually or put in a resealable bag or container. They should keep for 1-2 weeks.

Easy Marshmallow Pops
Ingredients
- 12 oz semi-sweet chocolate chips
- 12 large marshmallows
- ½ cup sprinkles
Instructions
- Melt the chocolate chips in the microwave in 30-second increments, stirring the chocolate between increments.
- Place a popsicle stick, lollipop stick or paper straw into each marshmallow. Dip the marshmallow halfway into the melted chocolate, rotating it to keep it smooth.
- Dip into the sprinkles to cover the bottom, then roll the sides.
- Place the marshmallow onto a baking sheet lined with parchment paper and repeat for the remaining marshmallows.
- When finished, allow all marshmallows to chill in the refrigerator for 20 minutes to set.
