It has been a strange week here in San Diego. We had an unusually cool summer until we hit 111ºF on Monday. Remember that song, “It Never Rains in Southern California?” Well, yesterday it poured all day with continued lightening and thunder. Lightening? Really? It was a great science lesson for the kids. Of course, that was after I calmed down Middle Child who was terrified and in tears over the whole experience!

Now, back to food!

Here is my second recipe I created using toast. This is part of Foodbuzz’s Tastemaker Program where I was able to sample a free loaf of bread from Nature’s Pride. I already posted my French Toast Cups with Orange Cream Cheese & Fresh Fruit. Here is my savory recipe with French toast cups: Beef Stroganoff Cups.

I soaked the bread in my egg-cream mixture, but added chopped rosemary and thyme to the mix. I had some leftover beef stroganoff from the night before. So, instead of serving it on noodles, I spooned them into the savory bread cups. The creamy sauce is soaked into the cups and the combination was fabulous. The savory cups were delicious with the stroganoff sauce. This is a great way to use up leftovers for lunch the next day, too.

Now I have to go dig out my umbrella! Stay dry!

This is such a unique idea. I haven't had beef stroganoff in forever, so this would be a cool way of serving it. By the way – I love it when it rains with lightning and thunder!
