Whole Wheat Chocolate Chip Pumpkin Waffles

Enjoy some pumpkin-goodness in these fall-inspired Belgium waffles! Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. Turn on waffle iron to preheat.
  2. In a medium bowl whisk:
    • 1 cup all-purpose flour
    • 1/4 cup wheat bran
    • 3/4 cup whole wheat flour
    • 1 TBS baking powder
    • 1 tsp granulated sugar
    • 1/2 tsp salt
    • 1/2 tsp cinnamon, ground
    • 1/8 tsp nutmeg, ground
  3. In a separate bowl mix:
    • 1 cup milk
    • 3 eggs, large
    • 1/4 cup butter, unsalted , melted
    • 1/4 cup pumpkin purée
    • 1 tsp vanilla extract
  4. In batches, combine dry ingredients into wet.
  5. Fold in:
    • 3/4 cup chocolate chips, bittersweet
  6. Pour approximately 1/2 cup of batter onto each side of the Belgium waffle iron.
  7. Follow waffle iron directions for cooking time. When done, remove and serve warm.
