Vegan Birthday Cake

This vegan birthday cake is dairy free and egg free and can be simply frosted, cut into elaborate shapes or made into vegan cake pops.

• Granulated sugar • All purpose flour • Baking powder • Salt • Vanilla extract • Almond milk • Ground flax • Extra virgin olive oil

In a medium sized bowl, whisk together flour, baking powder and salt.

In a small bowl whisk together water and ground flax.

In a large bowl, mix sugar and olive oil until it resembles wet sand.

Add vanilla and almond milk into sugar mixture and mix until combined.

Mixing on low speed, add flax water, scraping down sides in between.

In batches, add dry ingredients and mix until just combined.  Do not over mix the batter.

Coat two 9-inch round cake pans with oil and line with parchment paper.  Divide batter into prepared cake pans.

Bake at 350ºF until edges are golden, about 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

To make vegan frosting, whip vegan butter until smooth and fluffy. Add vanilla, almond milk and powdered sugar until well combined.

Once cooled, decorate as desired.

Melt vegan chocolate and you can make vegan cake balls!
