Twice Baked Butternut Squash

Don’t let this easy recipe for twice baked butternut squash fool you. Sometimes the best tasting recipe is also the simplest recipe.

Ingredients you need

Wash your butternut squash thoroughly then cut it in half length-wise.

Using a spoon, scoop out the seeds and strings inside the squash.

Brush squash with olive oil and season with salt and pepper. Place cut side down on baking sheet.

Bake squash at 400ºF (200ºC) until fork tender. Remove from oven and let squash rest until cool to touch.

Scoop out squash flesh and transfer to a casserole dish. Mash with salt, pepper and thyme. Add butter or more olive oil then bake again at 350ºF (177ºC).
