SMOKED PRIME RIB ROAST

IN A SMALL BOWL COMBINE: • Extra Virgin Olive Oil • Kosher Salt • Sage • Thyme • Rosemary • Chives • Black Pepper • Garlic
Rub roast all over with herb mixture then let the roast sit for 3 hours so it can get to room temperature.
Cook over indirect heat at 250ºF with indirect heat for about 3 hours, adding wood chips for smoking.
Raise temperature to 400ºF and continue grilling until internal temperature reaches 125ºF for medium-rare, about 45 minutes.
