Spinach and Potato Lasagna

This spinach and potato lasagna is super easy to assemble, very filling and economical, too. You may never go back to a noodle based lasagna again!

Ingredients You Need: • Russett Potatoes • Marinara Sauce • Ricotta cheese • Shredded Cheese  • Spinach • Salt

Layer bottom of baking dish with one layer of potato slices. Season  lightly with salt.

Spoon marinara evenly over potato slices, covering them completely.

Dab ricotta cheese evenly over marinara sauce. Press flat with back of a spoon.

Sprinkle about ⅓ cup of shredded cheese over the ricotta cheese layer.

Squeeze water from thawed spinach. Spread about ⅓ of spinach over cheese.

Continue adding layers until done, finishing with a layer of shredded cheese.

Bake at 450ºF (232ºC) for 30 minutes covered with foil then  15 minutes uncovered.
