Pork Ragu with Polenta

Use up leftover pulled pork to make this incredible pork ragu. Serve over pasta or creamy polenta and you’ve got one easy and incredible meal!

Ingredients Needed:

• Pulled pork • Tomato paste • Dry red wine • Diced tomatoes • Fresh sage, thyme,      basil and rosemary • Olive oil • Onions • Celery • Garlic • Salt and pepper

Begin the sauce by sautéing onions and celery. Once softened, add garlic and herbs.

Stir in tomato paste and cook to caramelize the sugar. The darker the color (without burning it), the deeper the flavor.

Once the tomato paste is browned, stir in the red wine and cook until the liquid is reduced by half.

Stir in the diced tomatoes and let the sauce simmer for at least an hour.

Add the shredded pork and let it cook with the sauce for an additional 20 to 30 minutes.

While the pork simmers in the sauce, prepare the side of your choice. Serve over egg noodles or polenta.
