Pineapple Upside Down Cake

This moist and delicious Pineapple Upside Down Cake bakes beautifully in a Dutch oven over campfire coals or at home in a cast iron skillet.

Ingredients Needed:

• Pineapple rings • Maraschino cherries • Light brown sugar • Ground cinnamon • Granulated sugar • Extra virgin olive oil • Plain Greek yogurt • Pineapple juice • Eggs • Vanilla extract • All purpose flour • Baking powder • Salt

In a fire ring or coal chimney light 20 charcoal briquettes.

In a large mixing bowl, whisk together granulated sugar and olive oil until whipped and smooth.

Whisk in yogurt, pineapple juice, eggs and vanilla extract.

Whisk flour, baking powder and salt into egg mixture until smooth and combined.

Place a layer of pineapples evenly  on the bottom of a Dutch oven lined with foil. Place a maraschino cherries into the center of each pineapple ring.

Sprinkle brown sugar and cinnamon evenly over the pineapple and cherries.

Pour cake batter evenly over the pineapple slices and place lid over Dutch oven.

Place 12 hot briquettes underneath your Dutch oven and 8 on the lid of your Dutch oven and bake until cake is done, about 30 minutes.

Remove lid and carefully place a plate over the Dutch oven and flip over.
