Lamb Meatballs

with Tomato Pomegranate

Think you are not a fan of lamb? These lamb meatballs are plump, juicy and served with a sweet and tangy tomato pomegranate sauce to mop up with a baguette.

INGREDIENTS YOU NEED: Ground lamb Cinnamon Cumin Salt and pepper Cornstarch Egg Fresh herbs Diced tomatoes Vegetable stock Pomegranate juice Honey Garlic Tomato paste Olive oil

Mix together lamb, green onions, cinnamon, cumin, salt, pepper cornstarch, egg, parsley and mint. Cover and refrigerate for 30 minutes.

In a large pot combine tomatoes, vegetable stock, pomegranate juice, honey, garlic, tomato paste, cinnamon and cumin.

Bring sauce to boil, then reduce to simmer for 30 minutes. Use a hand blender to purée sauce.

Use your hands to form the meatball shape and place on  baking sheet.

Brown meatballs evenly, gently rotating them every 3 minutes.

Gently place meatballs into the tomato sauce. Simmer until meatballs are cooked through and the sauce is thick.
