Instant Pot Beef Bourguignon

A classic French meal gets updated for modern times with this delicious and budget-friendly Instant Pot Beef Bourguignon.

Olive oil Bacon Chuck roast Onion Garlic Cognac or brandy Red wine Beef broth Tomato paste Thyme Butter Flour Mushrooms Pearl onions Salt and pepper

Set your Instant Pot to sauté on high and fry bacon until crispy. Transfer bacon to a bowl and set aside.

Add seasoned chunks of chuck roast into the hot bacon fat and brown all sides. Transfer into the bowl with the bacon.

Add onions to hot oil and continue to stir and sauté until onions start to soften and brown.

Add mushrooms and mix them in to cook. Season with salt and pepper.

When the mushrooms are softened, stir in garlic and thyme.

Stir in flour and  cook for 1-2 minutes to remove the raw flavor.

Stir in tomato paste, cognac, red wine and beef broth. Scrape the bottom to remove any browned bits.

Return bacon and  meat into the mixture in the Instant Pot and stir to combine. Secure lid and set it to MANUAL for 35 minutes. Natural release for 10 minutes then release the vent.

Set to SAUTE on high and add the frozen pearl onions. Let stew thicken and warm the onions for about 10 minutes.
