Trim off large deposits of fat. Pat meat dry with paper towels and season with salt and pepper.
Heat enough oil in a large turkey fryer to cover roast. Heat oil to 350ºF
Prepare garlic butter and inject throughout the rib roast.
SLOWLY lower roast into the hot oil to prevent splatter
fry it up
Fry until internal temp of roast center is 85ºF for rare, 90ºF for medium rare or 95ºF for medium.
Remove roast and place on a cutting board covered with a large paper grocery bag
Cover with foil and rest 20 minutes or until internal temp is 120ºF for rare, 130ºF for medium rare or 135ºF for medium.
