Adobada Tacos

Pork adobada tacos are a Mexican street food that you can easily make at home with layers of marinated pork, pineapple and bacon.

• Ancho chiles • Guajillo chiles • Garlic • Achiote paste • Vinegar • Orange juice • Boneless pork shoulder • Bacon • Pineapple • Extra virgin olive oil

Soak chiles in a bowl with warm water for 10 minutes. Drain and discard the water.

In a blender combine hydrated chiles, garlic cloves, vinegar, orange juice, salt and pepper. Blend until smooth and consistency is paste like.

Cut the pork in thin slices and place each slice between two sheets of plastic wrap and flatten until about ¼-inch thick using a meat mallet.

Place a few slices of pork on a pan, spread with adobo paste, top with bacon and pineapple. Repeat layers until you use everything up. Marinate in refrigerator and for 2 hours.

Drizzle meat with a little oil and roast at 375ºF until cooked through, about 40 to 50 minutes.

Transfer entire stack to a cutting board. Starting from one side of the meat stack, thinly slice downwards so you get all the layers together.

Make tacos by stuffing corn tortillas with sliced meat, cooked pineapple, chopped onions, cilantro and guacamole salsa.
