Its summer! Picture kids playing in the pool, family picnics,  camping trips and road trips. And what would summer be without watermelon smiles and sticky little faces, dripping with watermelon juice.

I felt like a giddy little kid when the Watermelon Board asked me if I’d like to carve a watermelon for their 3rd Annual Watermelon Carving Contest! What a fun project to do with the kids.

We have consumed at least a dozen watermelons since summer began. My family can’t get enough of this sweet, juicy fruit. Most of the time we just chop it up and eat it quick. This time, we brain stormed ideas on how to carve our round watermelon.

From the Death Star to a LEGO head, soccer ball to the Hulk, the kids thought of everything. We finally settled on Mike Wazowski, Billy Crystal’s character in the movie, Monsters’s Inc. My cousin, Sheiva, a theater production student at UCLA, was visiting and we had tremendous fun putting Mikey together with the bamboo we took from our yard.

What else can you do with a watermelon?

  1. Freeze into Popsicles.
  2. Make watermelon margaritas.
  3. Make a watermelon keg.

  6. Make a fruit basket.
  7. Make a strawberry & watermelon cooler.
  8. Eat it straight up.
  9. Blend with yogurt and make a watermelon smoothie.

Watermelon Granita with Mint

Juicy watermelon blended with mint makes this slushee granita a real treat to beat the heat! Recipe by Laura Bashar of Family Spice


  • 7 lb seedless watermelon
  • 1/2 cup mint, fresh, packed


  1. Remove rind, chop and working in batches, purée until smooth in a blender:
    • 7 lb seedless watermelon
    • 1/2 cup mint, fresh , packed
  2. Any seeds in the watermelon will get puréed.
  3. Chill watermelon mixture in the refrigerator for one hour.
  4. Freeze the mixture in your ice cream maker according to the manufacturer’s instructions. Serve immediately.
  5. This can also be made without an ice cream machine. Transfer watermelon mixture into a freezer-safe container and place in the freezer until frozen solid, about 3-4 hours. Use a fork to scrape into large crystals and spoon granita into chilled glasses.


Cooking Tips: You can also substitute sugar with honey or omit altogether if watermelon is perfectly sweet!
