When my kids came home from school after I shot the pictures for this post, the first they asked me was whether they could all the fruit. There is something about a bounty of colorful, fresh fruit that makes us all swoon. It’s our bodies way of telling us that this is good for us and we need more of it.
Well, that’s what I tell my kids.
Who needs unicorn frappuccinos filled with a week’s worth of sugar and artificial dyes when you can eat the rainbow naturally. Okay, I’m not saying that a sugar-laden caffeinated beverage is equal to a bowl full of fruit. But if we introduce our kids to the variety of produce out there, they will appreciate that there is more to eat than an apple, banana and watermelon.
Our own FDA can’t keep up with food trends or medical research. The food pyramid is now a plate. Filling up on breads is replaced with filling up on fruits and vegetables.
It’s hard to practice what you preach, totally. But with spring here and summer around the corner, it’s the best time to bring out the brightly colored produce to the family table.
Now these rainbow bagels can be an understated breakfast, just present a platter of fruit with your bagels and schmears. Or you can make a game of it with your kids: What red fruits should we try today? Can you name 4 green fruits? How many blue fruits are there?
You can also go sweet with fruits or savory with vegetables. Choose tomatoes, carrots and fresh herbs instead of sweet berries. Customize your breakfast bagel to suit your taste buds. Purple produce is my favorite produce, mostly because we can now find so many unusual foods stunning our plates in aubergine. This purple pigment is a rich antioxidant giving us the immune boost we can all use in our day-to-day life.

Rainbow bagel buffet
Kids love having a say in what they eat, so these rainbow bagels are super kid-friendly and crowd-friendly, too. For your bagel buffet, offer up a variety of bagels, from plain to everything to cinnamon raisin. You can also add plain and flavored cream cheeses, too. Mix them with colored fruit and you will have rainbow cream cheese spreads, too!
Then pile on the fruits and vegetables from one end of the rainbow spectrum to the other. Be sure to chop them into bit size pieces, making them easy to laden onto the bagel and easy eating, too.

I love bagels. Some of my favorite ways to top them always includes cream cheese of course. Most days I put a couple of slices of lunch meat on it for some added protein. I also love sliced tomatoes and of course lox. I like the idea of putting fruit on them, hadn’t thought of that. The toaster looks amazing.
I like to put apple butter on mines
Oh my goodness!!! I love, love, love bagels. Usually on the weekends I prepare breakfast bagels for the family. I, in particular like my bagel with a fried egg on top, add some avocado and bacon. Yummy!!!
I should say that my favorite bagel topping is avocado, right? And it is deeelish ! I really love cream cheese on an onion bagel … then some thinnly sliced avocado on the side. That toaster would be a great Mother’s Day gift! Pick meee!

I usually just put butter. Cream cheese is popular in our home, just not for me. I also like to use a bagel in place of hamburger buns.
My fave guilty pleasure bagel is smeared with whipped cream cheese, and then spread with lemon curd. It’s like a little bite of lemon cheesecake!

Bagels are a favorite around our house. Weike them all sorts of ways. Strawberries and mini chocolate chips on top of cream cheese are a fun sweet treat or top one with mashed avocado with lemon and garlic for a savory snack. Toasting gives them a nice crunchy texture.
My favorite bagel is topped with organic cream cheese, sliced grape tomatoes with a light sprinkling of sea salt and black pepper. If I’m feeling vegan-y, just a little Earth Balance can fill the bagel void.

I like my toasted bagels made into sandwiches. Lately, my go to is a cinnamon raisin bagel with a small bed of arugula, thinly sliced honey ham, caramelized onions, brie cheese and a nice slather of honey mustard. It may sounds odd, but it tastes great! This looks like a wonderful toaster, I find it very difficult to find one that perfectly toasts without drying out the bread/bagel.
