These crumb bars are super easy to assemble. You start with a buttery, short bread crust. No pre-baking is necessary. Just refrigerate while you work on the rest of the bars.

Peach Crumb Bars

Sweet summer peaches are perfect to enjoy alone or in this buttery Peach Crumb Bar.

Ingredients:

  • 3 1/2 cup all-purpose flour
  • 2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, cold
  • 1 large egg, lightly beaten
  • 7 peaches, diced (about 5 cups)
  • 2 TBS lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Directions:

  1. Preheat oven to 375ºF.
  2. Grease a 9" x 13" baking pan.
  3. In a medium bowl whisk together:
    • 3 cup all-purpose flour
    • 1 cup granulated sugar
    • 1 tsp baking powder
    • 1/4 tsp salt
  4. Using a pastry blender to cut in:
    • 1 cup unsalted butter, cold
  5. Mix in:
    • 1 large egg, lightly beaten
  6. The dough will be crumbly. Press half of the dough into the prepared pan.
  7. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.
  8. In a large bowl, gently mix together:
    • 7 peaches, diced (about 5 cups)
    • 2 TBS lemon juice
  9. In a separate bowl, whisk together:
    • 1/2 cup all-purpose flour
    • 1 cup granulated sugar
    • 1/4 tsp salt
    • 1/2 tsp ground cinnamon
    • 1/4 tsp ground nutmeg
  10. Pour flour mixture over the peaches and mix gently.
  11. Spread the peach mixture evenly over the refrigerated crust.
  12. Crumble the remaining dough over the peach layer.
  13. Bake in the preheated oven for 45 minutes, or until the top is slightly brown.
  14. Cool completely before cutting into squares.
