I am not a world traveler. Our trips tend to be taken in a car and not a jet. I am told that many people around the world find us Americans arrogant and cocky. I find that interesting considering that America is filled with people of all nationalities. There are millions of people trying to get into this country. There are millions of people who recognize the value of the freedoms available in this country. And, there are millions of people who want the opportunities that are available in this country. So, we can’t be all that bad, right?

I am of Persian, Polish and Lithuanian decent. My father is first generation American on his side. My mother is a naturalized citizen. So is my husband. From this, I think I can clearly speak for others that just because I am proud to be an American, it does not make me arrogant or a snob. In fact, I have friends of Bolivian, Filipino, Chinese, Mexican, Israeli, Arab, Iranian and French decent, to name a few. I embrace many cultures and their traditions.

And then, of course, there is food.

I love trying food from all over the world.

Most cities in the U.S. are filled with restaurants and markets of different countries. We have Little Italy, Little Saigon, Chinatown, Tehran-geles… In fact, our local governments are so accommodating to our immigrants that we offer ballots in different languages to those citizens who haven’t learned English yet.


How about confident and proud. That can be perceived as arrogance, but it’s not.

We need to be reminded that the leaders of countries (who should be honored to find themselves in these positions) and their personalities do not represent the millions of people that they serve. Because all of us are individuals, with our own opinions, quirks and oddities. And, that’s what makes this country so great. We have the freedom to be what we want to be without fear of persecution, jail or death.

You can’t say that for many other countries on our planet.

And, now, off my soap box. Let’s turn to food.

I don’t usually post red,white and blue recipes, but here are a few I came up with to celebrate our Independence Day this July 4th.

Red, White & Blue Poke Cake

This is truly American: 1 box of white cake mix, 2 boxes of Jello & 1 can of white frosting!

Red, White and Blue Jello

This dessert uses yogurt and is easy to make, whether you want a patriotic dessert or a rainbow of colors!


  • 7 cup water
  • 6 oz blue jello
  • 1 cup ice, crushed
  • 4 TBS plain yogurt
  • 6 oz red jello
  • 3 1/2 cup whipped cream
  • 6 oz blueberries
  • 8 oz strawberries, sliced


  1. Bring to boil:
    • 2 cup water
  2. In a medium-sized bowl, pour in the hot water and stir in:
    • 6 oz blue jello
  3. Whisk until gelatin has completely dissolved.
  4. Fill a glass measuring cup up with:
    • 1/2 cup ice, crushed
  5. Add enough water to the ice to measure out 2 cups total, approximately
    • 1 1/2 cup water
  6. Stir the ice water into the blue gelatin and whisk until all of the ice has melted.
  7. Pour half of the blue gelatin into your serving bowl and refrigerate until soft-set, approximately 90 minutes. Jello surface should be firm when touched.
  8. Reserve the remaining blue gelatin at room temperature until the 90 minutes has passed.
  9. Using a hand mixer, mix into the reserved room temperature jello until fully incorporated with no lumps:
    • 2 TBS yogurt, plain
  10. Using a half-cup measuring cup, slowly drizzle the yogurt mixture onto the soft-set layer of clear blue gelatin. You do not want to pour the whole amount all at once as it could break the top layer and mix in with the rest of the jello.
  11. Continue drizzling the remainder amount of the yogurt jello and refrigerate for 90 more minutes, until soft set.
  12. After the 90 minutes have passed, repeat steps 1-11 with
    • 6 oz red jello
    • 3 1/2 cup water
    • 1/2 cup ice
    • 2 TBS yogurt, plain
  13. Allow jello to completely set in the refrigerator, about 4 more hours.
  14. Right before serving, spread over the top layer of jello with:
    • 3 1/2 cup whipped cream
  15. Sprinkle over and around the whipped the cream layer with:
    • 6 oz blueberries
    • 8 oz strawberries, sliced
  16. Serve immediately.
