We are in full summer mode in my house. My boys just returned from their first Boy Scout summer camp for the season – they have three this summer (that’s what happens when their dad is also their scoutmaster). To celebrate Girls’ Week my daughter and I went to Disney’s California Adventure and spent 12 hours riding rides and enjoying this amazing park. Might I add that my hubby was one of the amazing imagineers who helped create this park? So visiting DCA has extra meaning for us. The weather here in San Diego has also warmed up and we have barbecues and picnics planned. Because summer is also all about the food!

Summer picnics almost always means potato salad. And I’m one of the first to admit to having a love-hate relationship with this iconic dish. I cannot eat the store bought stuff that is drowning in mayonnaise and full of BLAH flavors. But, I do love Persian potato salad and I have recently discovered that I swoon over mayonnaise-free potato salads.

I love using extra virgin olive oil in new and untraditional ways. And this olive oil potato salad is no different. Olive oil adds wonderful flavors and fabulous health benefits to all of your meals. Choose a peppery oil for an infused olive oil for more flavor. Fresh dill is another favorite that gives you great punch and flavor to your meals.

Lemon juice adds zing, a bit of bacon adds salt, some celery add crunch and a bit of sweetness is from raisins. This potato salad is anything but ordinary. And since there’s no mayonnaise in this potato salad, you don’t have to worry about it going bad from sitting outside for too long.

Say no to gloppy, gross, mayonnaise dripping potato salad and try something new this summer!

Olive Oil Potato Salad with Raisins, Lemon and Dill

Potato salads are a staple summer food for barbecues and picnics, but this Olive Oil Potato Salad with Raisins is anything but ordinary!

Ingredients:

  • 2 lbs Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 3 green onions, chopped
  • 2 celery stalks, chopped
  • 4 slices of cooked bacon, crumbled
  • 1/2 cup Sun-Maid raisins
  • 1/4 cup fresh dill, chopped
  • 1/4 cup extra virgin olive oil
  • 3 TBS lemon juice
  • 1 tsp lemon zest, grated
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper

Directions:

  1. Add to a small pot and cover with water:
    • 2 lbs Yukon Gold potatoes, peeled and cut into 1-inch pieces
  2. Cover and bring to a boil. Reduce heat to medium-high and cook 5 minutes or until tender. Drain.
  3. Whisk together in a large bowl until emulsified:
    • 1/4 cup extra virgin olive oil
    • 3 TBS lemon juice
    • 1 tsp lemon zest, grated
    • 1/2 tsp kosher salt
    • 1/4 tsp ground black pepper
  4. Stir in drained potatoes and:
    • 3 green onions, chopped
    • 2 celery stalks, chopped
    • 4 slices of cooked bacon, crumbled
    • 1/2 cup Sun-Maid raisins
    • 1/4 cup fresh dill, chopped
  5. Toss gently to coat.
  6. Serve immediately or chill in the refrigerator until ready to serve.
