Sneak in something healthy into your next Quick Bread and Muffin Recipes like wheat bran, protein powder, beets, almond butter and other great tips!
School has started in our house, and that means the usual rush to feed the kids in the morning and push them out the door. Plus, with the lunch packing and trying to please three different taste buds, I’m usually frazzled for most of the morning. I’m looking for easy breakfasts and snacks to pack for the kiddos to take to school. One way to do it, is with a muffin or quick bread. Most of them have wheat bran and other healthy stuff hidden inside. All have some sort of fruit. My muffins are sweetened with the least amount of sugar possible. It’s a muffin not a cake, ya’ll.
Here are a few of my favorite Quick Bread and Muffin Recipes:
Whole Wheat Banana Nut Bread: Made with wheat bran, whole wheat flour, walnuts and extra virgin olive oil.
Whole Wheat Banana with Blueberries: banana bread taken to the next level with the addition of antioxidant rich blueberries!
Doughnut Muffins: It can’t all be healthy! These babies are healthier than their fried cousins. A muffin that has the same texture of a doughnut, but baked, not fried.
Olive Oil Beet Bread with Walnuts: Beets? In a quick bread? Oh yeah, baby.
Whole Wheat Mango Nut Bread with Protein Powder: You can also sneak some protein powder into your quick breads. This works great for those of you who have nut allergies.
Lemon Blueberry Muffins: A classic muffin with a a bit of lemon.
Gluten Free Pumpkin Bread: This “bread” is grain-free and made with almond meal and almond butter, as well as pumpkin and other healthy bits.
