I was excited to see that our challenge this month was something I could use in my everyday life: making homemade nut butter. Nut butters are super healthy, and a great way to add nutrition to your meals. I’ve used nut butters and nuts in many baking recipes (remember Gluten-Free Brownies?), but I’ve never tried it in savory recipes.

I found the walnut butter easy enough to make, but mine didn’t become so smooth and pourable as I had hoped. It was probably because I made a small amount and I used a smaller food processor. You can add a little bit of oil at a time to smooth out the consistency. I chose to omit the oil. For softer nuts, you can make nut butter in a blender, too. And don’t forget the handy mortar and pestle!

Different nuts have different oil contents, so the amount of oil  you add to your walnut butter will not be the same amount of oil you would need for a cashew butter. But the basic concept is the same.

Add nuts to your high speed food processor and go for it. Keep processing your nuts until you get a smooth paste. Drizzle in a teaspoon of walnut oil or any plain olive oil slowly as it processes if you notice that your nut butter is dry and not turning into a paste.

It’s ridiculously easy to make your own nut butter, whether it is peanut butter, cashew butter, almond butter or even walnut butter. It also much more affordable to make your own nut butter than to buy it already made. Some hard-to-find nut butter can cost as much as $10-$12 a jar versus $3-5 worth of nuts to process yourself.

Homemade nut butters are relatively easy to make. This post explains how to make walnut butter, with pictures.

Ingredients:

  • 2 cups walnuts
  • 1-2 tsp walnut or extra virgin olive oil
  • pinch of salt

Directions:

  1. In a food processor fitted with a metal blade add:
    • 2 cups walnuts
  2. Pulse walnuts until crumbly and flour-like.
  3. Continue to grind walnuts and drizzle in:
    • 1-2 tsp walnut or extra virgin olive oil
  4. Process walnuts until smooth and creamy, scraping down the sides of the bowl as needed.
  5. Mix in:
    • pinch of salt
  6. When done, transfer to a jar, seal tightly, and refrigerate.

For added flavor, stir in a little honey, cinnamon or stevia.
