The kids have been in school for about six weeks now. So we have returned to our usual routine of morning rush, carpool schedules and homework fun. It’s always bumpy in the beginning. After sleeping in all summer long, myself included, getting up early is always a challenge.

But here in San Diego, the weather still feels like summer. Th evenings are starting to get their chill back, but during the day it is still quite sunny and warm. Our hills are dry from a parched summer. And quite frankly, we all get a little nervous this time of year for fear of fires.

I have to learn to let go of the things I can not control. That’s a tough one when you’re a control freak and a mom to 3 very different kids. They keep me on my toes. My Professor still likes to challenge me, especially when he thinks he knows better than his parents.

Middle Child throws the rule book out the window. And my princess smiles and twirls, but twinkle in her eye tells me there is trouble with this one in the not-so-distant future.

So all I can do is try to relax, take a sip of my margarita, and thank God for my blessings. I pray to have the strength to battle what lies ahead, but to also savor the special moments as they happen.

My husband would pray that I not be such a light-weight and would learn to drink more than my one drink maximum. But, even he has to learn to let go of what he cannot control!

He does make a mean margarita, the official drink of San Diego. Well, not really, but you certainly can get many a good margaritas in this town. And although I may be a light-weight when it comes to alcohol, and I can forgo drinking booze for months on end, I do like a good, not-super-sweet margarita.

The Classic Lime Margarita

Sometimes, you just need to stick with the classics. And this classic lime margarita is still a favorite of mine!

Ingredients:

  • 4 oz tequila
  • 2 oz cointreau
  • 2 oz fresh lime juice
  • 1 tsp kosher salt
  • lime wedges
  • 1 tsp kosher salt

Directions:

  1. In cocktail shaker filled with ice combine:
    • 4 oz tequila
    • 2 oz cointreau
    • 2 oz fresh lime juice
  2. Moisten the rim of two glasses with lime or water.
  3. Line a small plate with:
    • 1 tsp kosher salt
  4. Dip glass rims into the salt, fill glasses with ice and pour in cocktail.
  5. Serve immediately.
