So before you roll your eyes and say, “There she goes again with ANOTHER pumpkin recipe” hear me out! I roasted my own pumpkin to make homemade pumpkin purée, so I’m overflowing in pumpkin yumminess. And I’m putting pumpkin in just anything I can get my hands on!

The good news is that my kids don’t seem to mind (or notice) that I’ve put pumpkin in just about everything they’ve been eating. They actually love pumpkin and devour pumpkin pie regularly every chance they get. So the actually like the subtle pumpkin flavor.

The whole wheat pumpkin waffles are a modified version of the whole wheat waffles I make for my kids. My kids are used to my whole wheat baking that they don’t really care that these aren’t made with white flour. I personally like the nutty, earthy flavor of whole wheat baked goods.

But I’m also not a huge fan of the super sweet. And despite these waffles being studded with chocolate chips, the batter is not super sweet. ‘Cuz we like to drizzle it with some maple syrup, baby!

These waffles aren’t just made with whole wheat flour. They also have wheat bran in them, so these beauties are fiber packed, pretty filling and will give you energy through those frantic mornings of running to school, running to a soccer game, or just running around being a busy family.

When my brother gave me this Belgium waffle maker I didn’t think it would get used as much as it has been. Between the pancake-French toast-waffle breakfast choices, my kids really love these waffles. A lot thicker than the thin standard waffles, so one waffle fills up those tiny tummies pretty nicely.

Whole Wheat Pumpkin Waffles with Chocolate Chips

These hearty spiced Whole Wheat Pumpkin Waffles with chocolate chips are packed with fiber and gives you a taste of fall in every bite.

Ingredients:

  • 1 1/2 cup whole wheat flour
  • 1/4 cup wheat bran
  • 1 TBS baking powder
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 cup milk
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup pumpkin purée
  • 1 tsp vanilla extract
  • 1/4 cup bittersweet chocolate chips
  • 1/4 cup white chocolate chips
  • 1/4 cup butterscotch chocolate chips

Directions:

  1. Turn on waffle iron to preheat.
  2. In a medium bowl whisk:
    • 1 1/2 cup whole wheat flour
    • 1/4 cup wheat bran
    • 1 TBS baking powder
    • 1 tsp granulated sugar
    • 1/2 tsp salt
    • 1/2 tsp ground cinnamon
    • 1/8 tsp ground nutmeg
  3. In a separate bowl mix:
    • 1 cup milk
    • 3 large eggs
    • 1/4 cup unsalted butter, melted
    • 1/4 cup pumpkin purée
    • 1 tsp vanilla extract
  4. In batches, combine dry ingredients into wet.
  5. Fold in:
    • 1/4 cup bittersweet chocolate chips
    • 1/4 cup white chocolate chips
    • 1/4 cup butterscotch chocolate chips
  6. Pour approximately 1/2 cup of batter onto each side of the Belgium waffle iron.
  7. Follow waffle iron directions for cooking time. When done, remove and serve warm.
