If your house is like my house, Halloween madness is in full force. The house is all decorated, the candy is purchased, the party food is planned and the pumpkin is all carved up. I don’t know about you, but we always have a great time on Halloween.

 

It’s not about the candy, well, not for the adults! Every year we get together with the neighbors and have a Halloween block party. The kids play, we eat and drink, and when the sun goes down? Well, the trick-or-treaters break up into groups and head off for candy hunting.

But every year, whether I want to do it or not, we carve a pumpkin. It’s a pain in the butt, slimy and messy, but I suppose I should be happy that it is an activity and not a high sugar treat. And since they don’t mind getting their hands sticky, why should I?

So if you are carving a pumpkin this year, be sure to save the seeds and roast up some spiced pumpkin seeds. The first step is remove the seeds and most of the pulp from the seeds. Small kids fingers work perfect for this step!

Then you want to soak the seeds in water to remove the rest of slimy film off the seeds. You will need to swish and swirl the seeds in the water, as well as shake it up to get them clean. You can also soak them for a couple hours.

The next step is to dry the seeds completely before you roast them. This might take a couple days.

The final step is easy – it’s roasting time! You can roast them with just some salt or use this spicy mix for a little kick. Either way, you have a healthy, fun snack that the whole family will love. And no sugar is involved.

Spiced Roasted Pumpkin Seeds

Ingredients:

  • 1 medium-sized pumpkin
  • 1 TBS extra virgin olive oil
  • 1 tsp salt
  • 1 tsp lemon pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Directions:

  1. Remove seeds from:
    • 1 medium-sized pumpkin
  2. Place seeds in a large bowl and cover with water.
  3. Using your hands, swirl the seeds around in the water to help remove the pumpkin pulp and strings attached to the seeds.
  4. You will notice that the pulp will sink to the bottom of the bowl while the seeds float to the top.
  5. Using a slotted spoon, remove the seeds and place them on paper towels to pat dry. Let seeds dry completely on the baking sheet. This process can take a couple of days.
  6. Preheat oven to 325ºF.
  7. Place seeds in a medium-sized bowl and coat with:
    • 1 TBS extra virgin olive oil
  8. In a small bowl combine:
    • 1 tsp salt
    • 1 tsp lemon pepper
    • 1 tsp paprika
    • 1 tsp garlic powder
  9. Sprinkle spice mix evenly over both sides of the seeds.
  10. Apply non-stick spray to your baking sheet.
  11. Spread seeds in one layer onto your prepared baking sheet and place in oven.
  12. Roast in the oven for 20-25 minutes, making sure that every 10 minutes you stir the seed around to prevent them from burning.
  13. Remove from oven and allow seeds to cool on tray, about 20 minutes before serving.
