It is fall and that means the weather is cooler, Halloween is around the corner and pumpkin recipes are everywhere! And this blog is no different. I like to make my own pumpkin purée by roasting a sugar pie pumpkin. Now I have plenty of pumpkin goodness to last me the rest of the season!

The base of the cookie is like other chocolate chip cookies, creaming together butter, granulated sugar and brown sugar. Then we add eggs and flour.

But the real magic happens when we add pumpkin purée to the mix, giving the cookie dough a very naturally orange hue. Yes, fall is here! Now if you really want to get in the mood you can bump up the spices in these cookies add some cloves and nutmeg to it, in addition to the cinnamon already in the batter. But that’s totally up to you.

I was already in full cookie dough mode when I realized I didn’t have enough chocolate chips for these cookies. Gasp! I know! How could I run out of chocolate chips? So, I did the next best thing. I chopped up a chocolate candy bar and made some nice chocolate chunks.

You can make them thick or thin, depending on your personal taste. I made both varieties. And both varieties were gobbled up quickly in my house. My kids are so used to trying new things that the thought of pumpkin in their chocolate chip cookie didn’t phase them one bit.

Pumpkin Chocolate Chip Cookies

Add a touch of fall by mixing in some pumpkin purée to make this super moist Pumpkin Chocolate Chip Cookies.

Ingredients:

  • 2 cup all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 cup pumpkin purée
  • 1 tsp vanilla extract
  • 2 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350ºF.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together:
    • 2 cup all-purpose flour
    • 2 tsp ground cinnamon
    • 1 tsp baking soda
    • 1/8 tsp salt
  4. Using a stand mixer, whisk until creamed and fluffy:
    • 1 cup unsalted butter, room temperature
    • 1 cup granulated sugar
    • 1/2 cup light brown sugar, packed
  5. Beat in:
    • 1 large egg
  6. Mix in until well blended:
    • 1 cup pumpkin purée
    • 1 tsp vanilla extract
  7. In batches, mix dry ingredients into wet until fully incorporated.
  8. By hand, stir in:
    • 2 cup semi-sweet chocolate chips
  9. Scoop dough by tablespoons and place balls on prepared baking baking sheet.
  10. Bake for 12 minutes or until edges begin to lightly brown.
  11. Let cookies rest in the baking sheet for one minute, then using a spatula place onto a cooling rack to cool completely.
