The basic recipe starts the same with creaming brown sugar, granulated sugar and butter until creamy. Then you mix in eggs. At this point you have to decide if you are going with vanilla pudding or binge on more chocolate.

Moist Pudding Mix Chocolate Chip Cookies

The secret to these extra-moist chocolate chip cookies is pudding mix! Try it with either vanilla pudding mix or chocolate.

Ingredients:

  • 1 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 3 1/2 oz box of vanilla or chocolate instant pudding mix
  • 2 large eggs
  • 1 TBS vanilla extract
  • 2 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 2 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350ºF.
  2. Using a stand mixer, whisk until creamed (light yellow in color):
    • 1 cup unsalted butter, softened
    • 3/4 cup light brown sugar
    • 1/4 cup granulated sugar
  3. Mix in until well blended:
    • 3 1/2 oz box of vanilla or chocolate instant pudding mix
  4. Stir in:
    • 2 large eggs
    • 1 TBS vanilla extract
  5. In a separate bowl, whisk together:
    • 2 1/4 cup all-purpose flour
    • 1 tsp baking soda
    • 1/8 tsp salt
  6. In batches, mix dry ingredients into wet until fully incorporated.
  7. Using a scraper, fold in:
    • 2 cup semi-sweet chocolate chips
    • 1 cup chopped walnuts (optional)
  8. Drop cookies by rounded spoonfuls onto ungreased baking sheet or line a baking sheet with parchment paper for easy removal.
  9. Bake for 10-12 minutes, or until golden brown.
  10. Let cookies rest in the baking sheet for one minute, then using a spatula place onto a cooling rack to cool completely.
