Like little bird nests holding jeweled jam delights, these coconut jam thumbprint cookies make a wonderful holiday cookie or a sweet treat for your hot tea.
As you can imagine, after baking for school all week, I was getting a little burnt out and left uninspired. After baking up Oatmeal Butterscotch Bars, Oatmeal Fudge Bars and a Texas Sheet Cake, I had to find something to make for my daughter’s preschool class.
After reading the many emails of what other moms were bringing to the end-of-the-year party, I realized that these 3-year olds had plenty of choices to select from. And since they are home for lunch, I started thinking about making something for the moms volunteering today and of course, our two great teachers.
I pulled this recipe out when I was looking for a jam cookie and I made the Linzer Heart Sandwich Cookies. The Coconut Jam Thumbprint Cookie was a bit sophisticated for the 3 year-olds, but I knew the ladies would love them. And as luck would have it, I had all the ingredients in my pantry!
The cookie is almost shortbread like and after rolling the dough into small balls, you dip it in an egg wash and roll it in the shredded coconut. And press with the thumb, and you have a small well to spoon the jam in. As luck would have it, I had strawberry and orange marmalade in the refrigerator.
And now that school is out, and summer is here, I definitely know what I will be busy doing: Burning off the many calories I have accumulated this week. But, the adventure was fun and totally worth it! I hope you enjoy these fabulous treats.
