Carrots are such a versatile vegetable. They can be eaten raw as a snack or dipped into hummus. Carrots cooked any number of ways make a tasty side dish. These Roasted Baby Carrots with Thyme are my favorite.
You can also add carrots to main dishes for added flavor and texture! Chicken Teriyaki Buddha Bowls and Spicy Pulled Pork Ramen are both easy to put together and make great dinners!
