Leftover Corned Beef Bruschetta

Whether you need a snack or a St. Patrick's Day appetizer these bruschetta bites are full of flavor! Recipe by Laura Bashar of Family Spice



  1. Slice into 16 1/4-inch rounds from:
    • 1/2 baguette
  2. Slice into 16 even pieces from
    • 2 oz cheddar cheese
  3. Place the baguette slices onto a baking sheet and top each slice with cheese. Toast in a toaster oven or large oven until cheese is melted.
  4. Top each baguette with slices from:
    • 4 oz corned beef, cooked
  5. Dab over the corned beef pieces (1/2 teaspoon for each bruschetta):
    • 8 tsp whole grain dijon mustard
  6. Divide evenly and top bruschetta with:
    • 1/4 cup sauerkraut , drained
    • 16 green olives
  7. Serve immediately.

Serving Suggestions: Use a sharp cheddar to balance the salty corned beef. Flavored cheddars like Irish Whiskey or Horseradish are great choices, too!
