Baked Jerusalem Artichoke Chips

Jerusalem Artichokes have a sweet, nutty flavor when cooked. And since they have a low glycemic index, they are a perfect snack when you are watching your weight and you have a potato chip craving! Recipe by Laura Bashar of Family Spice



  1. Line a large baking sheet with parchment paper or silicone baking mat.
  2. Trim off ends and scrub clean:
    • 1 lb Jerusalem artichokes
  3. Season slices with:
    • 1/2 tsp salt
  4. Let Jerusalem artichoke slices sit for 30 minutes to extract excess water.
  5. After 30 minutes, preheat oven to 350ºF.
  6. Using a paper towel, squeeze out excess water and place slices in one layer onto the prepared baking sheet.
  7. Using a pastry brush, quickly coat slices with:
    • 1 TBS extra virgin olive oil
  8. Flip Jerusalem artichoke slices and coat with the remaining olive oil.
  9. Bake until crisp and lightly browned, approximately 30 minutes.
  10. Season as needed with:
    • 1/4 tsp salt
    • 1/8 tsp black pepper, ground
