Pomegranate Parfait with Blueberries

In France, a parfait is a frozen dessert. But, here in the U.S., we use the term for this healthy yogurt and fruit breakfast. Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. In a bowl, mix together:
    • 1 cup yogurt, plain Greek
    • 3 tsp pomegranate concentrate
  2. Divide yogurt into two small serving bowls.
  3. Top with:
    • 1/2 cup blueberries
    • 1/4 cup pomegranate arils
    • 1/4 cup granola
  4. Serve immediately.

Serving Suggestions: To make it gluten-free and low carb, omit the granola and use nuts like almond slivers or pistachios.
