Berry Cake with Coconut Rum

Here's a super easy cake to prepare with or without alcohol. Studded with strawberries, blueberries & coconut it's a perfect Red, White & Blue Cake! Recipe by Laura Bashar of Family Spice



  1. Preheat oven to 350ºF.
  2. Coat one 9-inch cake pan with non-stick spray and line the bottom with parchment paper.
  3. In a medium-sized bowl, whisk together:
    • 1 3/4 cup all-purpose flour
    • 1 TBS baking powder
    • 1/8 tsp salt
  4. In a small bowl whisk:
    • 6 egg whites
  5. In a large mixing bowl, using a hand held mixer or stand mixer whip until smooth:
    • 4 oz butter, unsalted , room temperature
    • 4 oz cream cheese , room temperature
    • 1 cup granulated sugar
  6. Add to the butter mixture and whisk until smooth:
    • 1/2 cup yogurt, plain
    • 1/2 tsp vanilla extract
  7. In batches, alternate mixing in flour mixture and egg whites into butter mixture until combined. Do not over mix.
  8. Pour and spread batter evenly into prepared pan.
  9. Place on top of cake batter in a pattern or randomly:
    • 5 strawberries , sliced
    • 1/4 cup blueberries
  10. Bake until a toothpick inserted into the center of the cake comes out clean, about 45 minutes.
  11. Let cake cool in the pan for 15 minutes, then remove and allow to completely cool on a cooling rack, about 45 more minutes.
  12. When cake is cooled, place on serving platter.
  13. To prepare the glaze, whisk together until smooth:
    • 1/2 cup powdered sugar
    • 2 tsp Malibu Rum
  14. Drizzle cake with all or some of the glaze, serving any remainder glaze with the cake.
  15. Sprinkle on top of the glazed cake with:
    • 1/4 cup coconut, sweetened , shredded
