Orzo with Feta and Sundried Tomatoes

A great side dish or meal that's easy to prepare and great for a picnic. Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. In a heavy saucepan bring to boil:
    • 2 qt water
    • 1/2 tsp salt
  2. Add to the boiling water and cook per package directions:
    • 1 lb orzo pasta
  3. While the orzo is cooking, mix in a large serving bowl:
    • 1/2 lb kalamata olives , pitted & chopped
    • 1/2 cup red onion , diced
    • 12 oz sun-dried tomatoes , packed in oil, drained & chopped
    • 1 cup spinach, fresh , packed, thinly sliced
    • 1/2 tsp oregano, dried
    • 3 TBS mint, fresh , thinly sliced
    • 1/2 tsp black pepper, ground
  4. When pasta is cooked, drain well in a colander and transfer to serving bowl.
  5. Add in:
    • 3 TBS extra virgin olive oil
    • 3 TBS lemon juice
    • 1/3 lb feta cheese , chopped or crumbled
  6. Toss gently and serve cold or at room temperature.
