Quinoa Caprese Salad

Here's a great quinoa twist to the traditional caprese salad. Recipe by Laura Bashar of Family Spice



  1. Cook per package directions:
    • 1 cup quinoa , uncooked
  2. When done, let quinoa cool to room temperature.
  3. In a large bowl whisk together:
    • 2 TBS balsamic vinegar, red
    • 3 TBS extra virgin olive oil
    • 1/2 tsp salt
    • 1/8 tsp black pepper, ground
  4. Stir in:
    • 1 1/2 lb baby heirloom tomatoes
    • 8 oz mini mozzarella balls , drained of liquid
  5. Mix cooled quinoa gently with the tomato mix and:
    • 1/2 cup basil , slivered
  6. Mix salad until fully incorporated.
  7. Serve at room temperature or chilled.

Cook Time: 15 min
Inactive Time: 20 min cooling time
Difficulty: Easy
Servings: 8
Serving Size: approximately 1 cup of salad

Serving Suggestions: Great as a side dish or appetizer.

Cooking Tips: Stir in some cooked chicken breast or shrimp and you've got a meal!
