Zucchini Parmesan Crisps

These zucchini crisps are baked and not fried, but still crunchy and addicting! Recipe adapted from The Food You Crave, Ellie Krieger

Ingredients:

Instructions:

  1. Preheat oven to 450ºF.
  2. Coat a baking sheet with cooking spray.
  3. Slice into 1/4-inch rounds:
    • 1 lb zucchini , about 2 medium zucchini
  4. Place zucchini rounds in a medium-sized bowl and toss to coat with:
    • 1 TBS extra virgin olive oil
  5. In a separate bowl, combine:
    • 1/4 cup Parmesan cheese , grated
    • 1/4 cup breadcrumbs, seasoned
    • 1/8 tsp salt
    • 1/8 tsp black pepper, ground
  6. Press each zucchini round into the Parmesan mixture, coating it evenly on both sides.
  7. Place coated zucchini round onto prepared baking sheet.
  8. Bake the zucchini rounds until browned and crisp, about 25-30 minutes.
  9. Serve immediately.
