Pomegranate Brie En Croute

Highlight your pomegranates in this elegant and fun appetizer. Recipe by Laura Bashar of Family Spice



  1. Remove from freezer and thaw at room temperature for 40 minutes or until it is easy to handle:
    • 1 puff pastry sheet
  2. In a small saucepan whisk over medium-high heat:
    • 1/2 cup pomegranate juice
    • 2 TBS granulated sugar
  3. Bring to boil and cook until reduced by half, about 8-10 minutes.
  4. Cool and reserve.
  5. Preheat oven to 400ºF.
  6. In a small bowl, whisk:
    • 1 egg, large
    • 1 TBS water
  7. In another bowl, soak for 1 minute:
    • 1/4 cup cherries, dried
    • 1/2 cup water , hot
  8. Drain cherries and pat dry.
  9. On a lightly floured surface, unroll your thawed puff pastry sheet.
  10. Using a rolling pin, roll it into a 14-inch square.
  11. In a bowl, mix softened cherries with reserved pomegranate syrup.
  12. Stir in with the cherries:
    • 1/4 cup pistachios , roasted & chopped
    • 1/4 cup pomegranate arils
    • 1/2 tsp rosemary, fresh , chopped
  13. Spread fruit and nut mixture onto center of puff pastry square.
  14. Place on top of fruit and nut mixture:
    • 13 1/4 oz brie , round
  15. Using a pastry brush, brush outer edges with the egg wash.
  16. Using one corner at a time, gently fold two sides over cheese.
  17. Trim remaining two sides of square to 2-inch from edge of cheese.
  18. Fold sides up onto cheese and press edges to seal.
  19. Place seam-side down onto a baking sheet.
  20. Decorate top of brie en croute with pastry scraps. You can cut them into shapes with a knife or use mini cookie cutters.
  21. Brush top with egg mixture.
  22. Bake the pastry until a deep golden brown and crisp, about 20-25 minutes.
  23. Let stand for 30-45 minutes and transfer to serving plate.
  24. Garnish with:
    • 1 TBS pomegranate arils
  25. Serve.

Serving Suggestions: Vary the dried fruit combination to include one or more choices. For nuts, choose from pecans, walnuts, pistachios and almond slivers. You can also serve with fresh fruit and berries.

Cooking Tips: Do not stretch the puff pastry to much or it will puncture and the cheese & filling will seep out. When decorating your brie en croute, the puff pastry scraps are very forgiving. Any shape or design you do will puff and turn out beautifully.
