Campfire Baked Apples Stuffed with Nuts and Dried Fruit

This easy dessert can be made at home or around the campfire. Recipe by Laura Bashar of Family Spice



  1. Using a knife of an apple corer carefully core:
    • 4 large apples , such as Gala or Granny Smith
  2. Be sure not to break open the apples.
  3. Brush the inside of the apples with:
    • 1 TBS lemon juice
  4. Place each apple on their own a 10-inch square sheet of aluminum foil.
  5. In a small bowl, mix:
    • 1 TBS lemon juice
    • 1/4 cup cranberries, dried
    • 2 TBS raisins
    • 2 TBS walnuts , chopped
    • 1/4 tsp cinnamon, ground
    • 1/8 tsp nutmeg, ground
    • 1/2 TBS butter, unsalted , softened
  6. Press dried fruit mixture into the center of each cored apple.
  7. Cut into four pieces:
    • 1/2 TBS butter, unsalted
  8. Place one piece of butter on top of each apple, over the center filled with the dried fruit mixture.
  9. Wrap each apple tightly with the aluminum foil.
  10. Place aluminum foil wrapped apples in or next to hot coals, not onto open flame, and cook for 30 minutes - 1 hour. Keep checking your apples. If coals are too hot, remove from coals and place on a grate over the coals. Apples are done when they feel tender when squeezed. Serve warm.*

Serving Suggestions: Mix it up with different nuts (pecans, macadamia nuts) and dried fruits (dried apricots, currants, cherries). For an extra indulgent, during the last 5 minutes of cooking time, add 1 caramel candy square on top of apple.

Cooking Tips: * Apples can also be baked in an oven at 350ºF for approximately 1 - 1 1/2 hours.
