Caramelized Onion Dip with Beer
These sweet caramelized onions will quickly & easily replace that boxed onion dip of yours. Recipe by Family Spice
Ingredients:
- 1/4 tsp black pepper, ground
- 1 tsp salt
- 4 TBS butter, unsalted
- 1/8 tsp cayenne pepper, optional
- 4 oz cream cheese, room temperature
- 1/2 cup mayonnaise
- 2 TBS extra-virgin olive oil
- 2 large onions, yellow or vidalia
- 1/2 cup sour cream
- 12 oz beer, *
Instructions:
- Peel, cut in half and slice into 1/8-inch thick half-rounds:
- 2 large onions , yellow or vidalia
- Heat a large frying pan over medium-high heat and add:
- 4 TBS butter, unsalted
- 2 TBS extra-virgin olive oil
- Add the onions to the hot pan.
- Season onions with:
- 1 tsp salt
- 1/4 tsp black pepper, ground
- 1/8 tsp cayenne pepper , optional
- Stir and sauté onions for 10 minutes.
- Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized.
- Add to the onions:
- 12 oz beer , *
- Increase heat to medium-high and cook onions until beer reduces by 1/3, approximately 10 minutes.
- Remove from heat and allow the onions to cool to room temperature, about 20 minutes.
- In a medium-size bowl, mix with a hand blender or a rubber scraper until smooth:
- 4 oz cream cheese , room temperature
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- Stir in onions and adjust seasoning to your taste.
- Serve at room temperature.

Cooking Tips: You can make this dip ahead and refrigerate after it is complete. Remove from the refrigerator 30 minutes prior to serving to soften the dip and bring it to room temperature. * The alcohol in the beer is burned off, making this safe for kids to eat.
