Slow Cooker Chicken Fricassée

This French stew is traditionally a dish made of chicken, rabbit or veal and stewed in a creamy white gravy. Fabulous in a slow-cooker, and another great recipe that you can dress up for guests or easily serve as a weekday meal. Recipe by Laura Bashar of Family Spice



  1. Rinse and pat dry with paper towels:
    • 5 lb whole roasting chicken , quartered with back removed
  2. Season both sides of the chicken pieces with:
    • 1 tsp salt
    • 1/2 tsp black pepper, ground
  3. In a large non-stick skillet over medium-high heat add:
    • 1 TBS extra virgin olive oil
    • 1 TBS butter, unsalted
  4. When butter has melted, add the chicken pieces and cook until browned, about 5 min.
  5. Turn chicken over and brown other side, another 5 min.
  6. Transfer chicken to your slow-cooker.
  7. Stir into the pan juices:
    • 2 TBS all-purpose flour
  8. Cook flour for 2 min than whisk in:
    • 1 cup white wine
    • 2 cup chicken broth
  9. Bring sauce to a boil and continue cooking and stirring until sauce thickens, about 5-7 mins.
  10. Pour sauce over the chicken in the crockpot and add:
    • 1 bouquet garni
    • 1 lb mushrooms , halved
  11. Cook in the slow-cooker on high for 3-4 hours, or until the chicken is cooked and tender.
  12. During the last 30 min of cooking, stir in:
    • 1/2 lb pearl onions , frozen (optional)
  13. When ready to serve, transfer chicken and vegetables to a serving platter.
  14. Discard bouquet garni and whisk into the sauce:
    • 1/4 cup sour cream
    • 1/4 cup parsley, Italian , coarsely chopped, loosely packed
  15. Pour sauce over the chicken and serve.
