Sherry Bars
Think rich chocolate brownie meets sherry infused cream topped with decadent chocolate fondant. These bite-sized morsels will make your whole party sing! Recipe adapted from Donna Ohlson
Ingredients:
- 1/2 tsp salt
- 1 1/2 cup butter, unsalted
- 4 TBS butter, unsalted
- 4 eggs, large, lightly beaten
- 1 cup all-purpose flour
- 1/2 cup half-and-half
- 4 cup powdered sugar, sifted
- 1/4 cup sherry
- 3 TBS sherry
- 1 tsp sherry
- 2 cup granulated sugar
- 1 tsp vanilla extract
- 2 cup walnuts, chopped
- 4 oz chocolate, dark, unsweetened
- 6 oz chocolate chips, semi-sweet
Instructions:
- Preheat oven to 350ºF. If using a glass dish, reduce heat to 325ºF.
- Grease a 10" x 14" baking pan and set aside.
- In a double boiler, melt on medium to medium-low heat:
- 1 cup butter, unsalted
- 4 oz chocolate, dark , unsweetened
- Cool slightly.
- Mix into the chocolate mixture:
- 2 cup granulated sugar
- 1/2 tsp salt
- 1 cup all-purpose flour
- 1 cup walnuts , chopped
- 1 tsp vanilla extract
- 1 tsp sherry
- Whisk in:
- 4 eggs, large , lightly beaten
- Pour batter into prepared pan and bake for 25 minutes, or until a toothpick inserted into the center of the brownie comes out clean.
- In a medium-sized bowl, whisk together with a hand blender until light and fluffy:
- 1/2 cup butter, unsalted
- Gradually mix in:
- 4 cup powdered sugar , sifted
- 1/2 cup half-and-half
- 1/4 cup sherry
- Mix in:
- 1 cup walnuts , finely chopped
- Spread over the brownie base.
- Cover and chill.
- In a double boiler, melt on medium to medium-low heat whisking constantly:
- 6 oz chocolate chips, semi-sweet
- 3 TBS sherry
- 4 TBS butter, unsalted
- When chocolate is completely melted, dribble on top of fondant layer.
- Cover and chill completely, approximately 2 hours.
- Cut into small squares and serve.
