Sherry Bars

Think rich chocolate brownie meets sherry infused cream topped with decadent chocolate fondant. These bite-sized morsels will make your whole party sing! Recipe adapted from Donna Ohlson

Ingredients:

Instructions:

  1. Preheat oven to 350ºF. If using a glass dish, reduce heat to 325ºF.
  2. Grease a 10" x 14" baking pan and set aside.
  3. In a double boiler, melt on medium to medium-low heat:
    • 1 cup butter, unsalted
    • 4 oz chocolate, dark , unsweetened
  4. Cool slightly.
  5. Mix into the chocolate mixture:
    • 2 cup granulated sugar
    • 1/2 tsp salt
    • 1 cup all-purpose flour
    • 1 cup walnuts , chopped
    • 1 tsp vanilla extract
    • 1 tsp sherry
  6. Whisk in:
    • 4 eggs, large , lightly beaten
  7. Pour batter into prepared pan and bake for 25 minutes, or until a toothpick inserted into the center of the brownie comes out clean.
  8. In a medium-sized bowl, whisk together with a hand blender until light and fluffy:
    • 1/2 cup butter, unsalted
  9. Gradually mix in:
    • 4 cup powdered sugar , sifted
    • 1/2 cup half-and-half
    • 1/4 cup sherry
  10. Mix in:
    • 1 cup walnuts , finely chopped
  11. Spread over the brownie base.
  12. Cover and chill.
  13. In a double boiler, melt on medium to medium-low heat whisking constantly:
    • 6 oz chocolate chips, semi-sweet
    • 3 TBS sherry
    • 4 TBS butter, unsalted
  14. When chocolate is completely melted, dribble on top of fondant layer.
  15. Cover and chill completely, approximately 2 hours.
  16. Cut into small squares and serve.
