Pfeffernuse Crescents
This German holiday treat has a hint of pepper with a touch of citrus infused within. Recipe adapted from Family Circle, December 2008
Ingredients:
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp black pepper, ground
- 1/4 tsp salt
- 1/4 cup butter, unsalted, softened
- 1/2 tsp cinnamon, ground
- 1/4 tsp cloves, ground
- 2 eggs, large
- 2 1/2 cup all-purpose flour
- 1 cup honey
- 1 TBS orange zest
- 1 cup powdered sugar
- 1/4 tsp nutmeg, ground
Instructions:
- In a large bowl whisk together:
- 2 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp black pepper, ground
- 1/2 tsp cinnamon, ground
- 1/4 tsp nutmeg, ground
- 1/4 tsp cloves, ground
- Using a stand mixer, whisk together until smooth:
- 1/4 cup butter, unsalted , softened
- 2 eggs, large
- 1 TBS orange zest
- Whisk in until combined:
- 1 cup honey
- Put mixer on low speed, gradually add flour mixture, and beat until incorporated.
- Cover and refrigerate dough overnight.
- Preheat oven to 350°F.
- With well-floured hands, form 1 level teaspoon dough into a ball.
- On a well-floured work surface, form each ball into a 2 1/2-inch-long log.
- Bend into a crescent shape and place on ungreased baking sheet.
- Repeat with remaining dough.
- Bake for 8 minutes until slightly golden.
- Remove from oven and place baking sheet on cooling rack for 1 minute.
- Roll warm cookies in:
- 1 cup powdered sugar
- Place cookies on cooling rack to cool completely.

Serving Suggestions: If you like your Pfeffernuse spicier, increase pepper to 1/2 tsp. You can also use other forms of ground pepper, from white to pink peppercorns crushed.
