OMG Mud Pie!
Homemade ice cream cakes are super easy to put together. And when you bring this dessert out, jaws will be dropping on the ground! Recipe adapted from Family Circle, March 2010
Ingredients:
- 1/4 cup butter, unsalted, melted
- 2 cup heavy cream
- 2 TBS granulated sugar
- 1/2 tsp vanilla extract
- 1/2 cup almond slices, toasted
- 2 TBS almond slices, toasted
- 36 oreo cookies
- 2 pint vanilla ice cream
- 2 pint chocolate ice cream
- 1 cup bottled fudge sauce, room temperature
- 4 Twix candy bars, coarsely chopped
Instructions:
- Preheat oven to 350ºF.
- In a food processor finely crush:
- 24 oreo cookies
- In medium-sized bowl combine until moistened crushed oreos and:
- 1/4 cup butter, unsalted , melted
- Press into the bottom and up the sides of a 9-inch deep dish pie plate.
- Bake crust for 15 minutes.
- Transfer to a cooling rack and cool for at least 30 minutes.
- Remove from freezer and allow to soften for 5 minutes:
- 2 pint vanilla ice cream
- 2 pint chocolate ice cream
- Transfer vanilla ice cream to a bowl and stir until good spreading consistency.
- Repeat with the chocolate ice cream.
- Spread vanilla ice cream into cooled crust and spread evenly.
- In a ziploc bag, coarsely crush:
- 12 oreo cookies
- Sprinkle coarsely crushed cookies over the vanilla layer of ice cream.
- Spread chocolate ice cream over the top of the crushed cookie layer.
- Freeze for 2 hours.
- Carefully spread on top of the chocolate layer of ice cream:
- 1 cup bottled fudge sauce , room temperature
- Sprinkle over the fudge sauce:
- 1/2 cup almond slices , toasted
- 3 Twix candy bars , coarsely chopped
- Cover with plastic wrap, making sure it doesn't stick to the fudge sauce and freeze overnight.
- Remove pie from freezer. Let stand at room temperature for 10 minutes before serving.
- Meanwhile, using a stand mixer or hand blender, mix on high speed until medium peaks form:
- 2 cup heavy cream
- 2 TBS granulated sugar
- 1/2 tsp vanilla extract
- Spread whipped cream over pie.
- Sprinkle with:
- 2 TBS almond slices , toasted
- 1 Twix candy bars , coarsely chopped
- Cut and serve immediately.
